More Food Tales

Rather than rant about the political situation, which for now would come off as a disgusted rant, I will return to my blogging about veggie hauls. When we took a share in Grants Farm, a major motivation was to not only eat local, but eat what was in season. Additionally, we didn't want to waste any of the veggies, so the week's tasks has always included some major cooking and storing. A couple of weekends ago ended up being a major cookathon of veggies from the garden and the weekly share pickups.

Cabbage Soup
Saute several cloves of garlic and onions in EVOO
Add one large head of green cabbage roughly chopped
Add an equal mix of vegetable stock and water (enough to fully cover the cabbage and give you the right mixture of liquid to solid that you like in a soup)
Cook over a low flame for 30 minutes
Then add 45-55 oz. of cannelli/white beans
Add a few heaping tablespoons of garam masala spice
Cook over a low flame for about 45 minutes (or desired consistency)
To serve, grate some fresh parmesan cheese on top of the bowl of soup and serve with crusty bread

Other creations included a ratatouille (eggplant, yellow squash, zucchini, onions, garlic, tomatoes, and fresh herbs from the garden)
Buffalo pot roast with carrots, onions, celery, tomatoes, and fresh herbs from the garden
Asian slaw made with kohlrabi (I had never used one before this--reminded me a bit of jicama in terms of flavor), red cabbage, apple cider vinegar and tamari
Broccoli quiche
Green chili quiche (it's Hatch green chili season so we bought a bushel and spent an evening cleaning them)

I'm sure there were more creations since the lapse in my weekly blogs about the veggie haul, but for now this scattered recounting must suffice
